Scrumptious Seafood: Tequila Steamed Clams
Clams are tasty and healthy; they are a great source of iron, protein, and Omega-3 fatty acids. Most importantly, clams are also easy to prepare!
Tequila Steamed Clams
Ingredients:
1 pound fresh clams, well scrubbed and rinsed. (Make sure that none of the clams have opened. If a clam has opened, give it a light tap on the shell. If it closes up, it is OK. If it does not close up, discard it).
1/4 cup vegetable stock or broth
1/2 cup heavy cream
1 tablespoon butter
3 ounces tequila
1 fresh lime, cut in half
good handful fresh cilantro leaves, chopped
salt
baguette, optional but highly recommended
Directions:
Heat a saucepan over medium heat for 30 seconds to 1 minute until hot. Add tequila and cook for 30 seconds to burn off the alcohol. Add the clams, vegetable stock and heavy cream. Cover and simmer for 3 – 5 minutes until all clams have opened up. (Make sure to discard any clams that have not opened up after cooking for 5 minutes.) Remove from heat. Add butter and cilantro and stir to incorporate. Squeeze in the juice of the lime and a pinch of salt. Transfer clams to serving bowl and set aside. Reduce the sauce a little over medium-high heat until desired thickness is achieved. Pour sauce over clams in serving bowl.
Serve Tequila Steamed Clams with big hunks of crusty baguettes to soak up all of that great flavor.
